Vegan Breakfast & Hasselback Tomatoes

Prep Time: 10mins    Cook Time: 20mins   Serves: 4

This dish is ready in under an hour, super easy, and makes a great side or main dish. This dish combines classic flavours that everyone will love.

Ingredients:

  • 6 Large Tomatoes
  • 1 Pack of Chestnut Mushrooms
  • 1 Bunch of Fresh Thyme
  • 1 Pack of Heck! Vegan Breakfast Sausages
  • Olive Oil
  • Salt & Pepper 
  • Pumpkin Seeds to garnish

Method:

  1. Preheat the oven to 180 degrees.
  2. Slice along the top of the tomatoes, trying not to cut too deep.
  3. In the middle of each tomato, place a small sprig of thyme in the middle slit. Brush the tomatoes with olive oil then pop into the oven for ten minutes
  4. After ten minutes add the mushrooms between the tomatoes, then place them back into the oven for a further ten minutes.
  5. Meanwhile fry off the sausages until golden. Once the tomatoes are ready, put the sausages into the dish with the tomatoes.
  6. Garnish with pumpkin seeds.
  7. Enjoy!
