This dish is ready in under an hour, super easy, and makes a great side or main dish. This dish combines classic flavours that everyone will love.
Ingredients:
- 6 Large Tomatoes
- 1 Pack of Chestnut Mushrooms
- 1 Bunch of Fresh Thyme
- 1 Pack of Heck! Vegan Breakfast Sausages
- Olive Oil
- Salt & Pepper
- Pumpkin Seeds to garnish
Method:
- Preheat the oven to 180 degrees.
- Slice along the top of the tomatoes, trying not to cut too deep.
- In the middle of each tomato, place a small sprig of thyme in the middle slit. Brush the tomatoes with olive oil then pop into the oven for ten minutes
- After ten minutes add the mushrooms between the tomatoes, then place them back into the oven for a further ten minutes.
- Meanwhile fry off the sausages until golden. Once the tomatoes are ready, put the sausages into the dish with the tomatoes.
- Garnish with pumpkin seeds.
