This is a colourful, delicious and easy Chicken and Prawn Jambalaya recipe – all in one pot! It’s great to serve at parties and it reheats well. It’s a bold dish packed with Cajun jambalaya flavours!
Ingredients
- 1 Pack Heck! Paprika Chicken Sausages
- 1 white onion
- 2 crushed garlic cloves
- 1 red pepper (sliced)
- 1 yellow pepper (sliced)
- 1 green chilli (sliced)
- 1tbsp cajun seasoning
- 1tsp paprika
- 225g long grain rice
- 400ml chicken stock
- 60g diced chorizo
- 40ml olive oil
- 12 cooked king prawns
- Salt & Black pepper
Method
- In a large frying pan add the olive oil, onion, chorizo and cook for 5 minutes then add the sliced peppers, chillis and garlic and cook for 2 minutes then add the spices and the rice and stir well so the rice is coated in all of the spices.
- Pour over the chicken stock and stir, then cover the pan and simmer for 15-20 minutes until the rice is tender.
- As this is cooking fry or grill your sausages until they are cooked, once the jambalaya is cooked add the prawns and cooked sausages and stir them in (sausages can be sliced but we kept them whole) season to taste and serve.
