Pork Italia Caponata

Pork Italia Caponata

Grilled pork Italia sausages on a bed of aubergine, onion, garlic, carrot and pepper, cooked in a tomato sauce and finished with fresh parsley.

 



Ingredients

  • 1 pack Heck! Pork Italia Sausages
  • 2 tbsp olive oil
  • 1 Aubergine, cut into 1.5cm cubes
  • 1 White Onion, diced
  • 2 Carrots, (cut into small pieces)
  • 2 red peppers, (cut into small cubes)
  • 2 garlic cloves, minced
  • 1 tbsp red wine vinegar
  • 1 tbsp tomato paste
  • 1 tsp honey
  • 1 x 400g can chopped tomatoes
  • Handful fresh parsley

Method

  1. Heat 1 tbsp olive oil in a large non-stick pan over medium heat. Add the aubergine and cook, stirring, for 10-12 minutes until soft. Remove from the pan and set aside.
  2. Add another tbsp of oil to the pan, add the onion, carrot and pepper, cook for 5 minutes before adding the minced garlic and cooking until all vegetables have slightly softened.
  3. Stir in the aubergine and tomato puree and vinegar, cook for 1-2 minutes before adding the chopped tomatoes and honey, season and simmer for 15 minutes or until thickened and reduced.
  4. Meanwhile, place the sausages under a hot grill, turning frequently until cooked through (15 minutes).
  5. Serve the sausages with the caponata and sprinkle over some fresh parsley.
