Piri Piri Posh Nugget Sandwich

Our Piri Piri Posh Nuggets, topped with slices of halloumi and sweetcorn mayo

Ingredients

  • 4 Heck! Piri Piri Chicken Nuggets
  • 3 slices Halloumi Cheese
  • Handful Baby Gem Lettuce (shredded)
  • 2 tbsp Mayonnaise
  • 2 tbsp Sweetcorn
  • 2 tsp Peri Peri Sauce
  • 2 slices Wholemeal Bread

Method

  1. Preheat the oven to 180°C. Place the nuggets onto an oven trays and bake for 20 minutes until golden and crisp.
  2. Meanwhile prep the sweet corn mayo by mixing together the sweetcorn, mayonnaise and peri peri sauce in a small bowl, set aside.
  3. During the last 10 minutes of cook time, place a frying pan onto a medium heat, add a tsp olive oil, then the halloumi slices and fry for 3-4 minutes each side until golden.
  4. Add a handful of lettuce to the first slice of bread, top with the goujons, halloumi slices, sweetcorn mayo and finally the remaining slice of bread. Cut in half and serve immediately.
