Naked Burger Buffet Plate

Cook Time: 20-25 mins - Serves 2

This colourful, flavoursome dish is a delicious solution to those left over ingredients in your fridge. 

Ingredients

  • Chicken, Red Pepper & Feta Burgers
  • 360g New Baby Potatoes
  • Rocket Leaves
  • ½ Red Cabbage
  • ½ White Cabbage
  • 2-3 Carrots depending on size
  • 1 Lemon
  • 2 Sprigs of Spring Onion
  • Mayonnaise
  • Salt & Pepper to season
  • Olive Oil

Method

  • In a large hot pan, cook your HECK burgers with a little oil until golden brown and cooked all the way through. Whilst cooking, prepare your burger plate
  • In a separate pan with boiling water, add in the baby potatoes, cut some in half if they are a little big, this will help them cook quicker. Cook for around 8-10 minutes or until softened. Drain the water and set aside
  • Using a grater, or a large sharp knife, grate up the cabbages and carrots - You can mix in some mayonnaise at this point to make a more traditional creamy slaw or serve it on the side with a squeeze of fresh lemon
  • On a large plate, add on the cooked HECK chicken burger, slaw, baby potatoes with chopped spring onion & olive oil & seasoning, serve with fresh rocket and a squeeze of fresh lemon or lime for a refreshing light meal
  • Serve and enjoy!
