Minted Pea, Spinach & Chicken Mince Stir Fry

This Thai-style stir-fry is made using our delicious seasoned chicken mince, tossed with tenderstem broccoli, spring onions, spicy red chillies, and soft noodles. Serve with a generous squeeze of fresh lime juice. Huzzah!

 Ingredients

  • 1 Pack Chicken, Minted Pea & Spinach Mince
  • 300g Fresh Egg Noodles
  • 100g Tenderstem Broccoli
  • 1 Fresh Red Chilli (Finely Sliced)
  • 3 Spring Onions (Sliced)
  • 1 Lime (Juiced)
  • 1 Tbsp Sesame Seeds
  • 1 Tsp Chilli Flakes

Method

  1. In a hot frying pan/wok, add 2 tbsp of oil and add the Heck! mince, break into small pieces using a wooden spoon.
  2. In another pan with boiling water, add the tenderstem broccoli and cook until slightly softened. Once cooked, drain and add it to the mince.
  3. Add the noodles and sliced red chilli to the mince. For an extra kick add a sprinkle of chilli flakes.
  4. To finish, squeeze over the lime, scatter the sesame seeds and top with slices of the spring onions.
