These Meat Free and Asparagus Puff Pastry Bundles topped with yummy Vegan Pesto and Vegan Cheese are an easy appetiser or brunch idea! Perfect for Easter or any other spring brunch!
- 4 Heck! Meat Free Sausages
- 1 bunch asparagus
- 2 Salad Tomatoes (Thinly Sliced)
- 1 pack Ready Made Puff Pastry
- 50g Vegan Cheddar
- 20ml Almond Milk
- 2 tbsp Vegan Green Pesto
Preheat oven to 180'C. Line a baking tray with parchment paper.
Remove the packaging from pastry. Roll it out on a clean surface.
- Split the sheet into 4 rectangles.
Toss asparagus in olive oil and season with salt and pepper.
To make the bundles, place 3 slices of tomato diagonally down the middle of the rectangle. Follow with 2 stalks of asparagus and 1 flattened Meat Free sausage.
Lift two opposite corners of the puff pastry squares and wrap them around the asparagus and sausage, press to seal. Continue doing this until all rectangles are filled.
Brush puff pastry with almond milk wash. Sprinkle with Vegan Pesto and Vegan Cheese
Bake until the puff pastry is golden and puffed, about 15 minutes.
