ITALIA GREEK SALAD

Prep Time: 10 mins Cook Time: 15 mins - Serves: 2

Ingredients

  • 1 Pack HECK! Chicken Italia Sausages 
  • Spray oil
  • 1 small red onion (Peeled and sliced)
  • 1tbsp fresh oregano or thyme 
  • 50g pitted olives
  • 150g baby plum tomatoes 
  • 1 little gem lettuce (torn)
  • ½ small cucumber (deseeded and sliced) 
  • 40g reduced fat feta 
  • Squeeze of lemon juice

Method

  1. Spray a medium frying pan with oil and set over a medium heat. Add sausages and onions, and cook for 10-12 mins until sausages are golden and onion is cooked through. Add oregano or thyme, olives and tomatoes. Cook for 2-3 mins until tomatoes begin to burst. Season and set aside for a few mins.

  2. Scatter lettuce and cucumber between two plates. Top each with the sausage and tomato mixture, crumble over the feta. Squeeze over a little lemon juice and serve
