Flavoured Chicken Meatballs with Spaghetti

 Prep Time: 5mins - Cook Time: 15-20mins - Serves 2
Quick, easy & full of flavour - guaranteed to be a mid-week winner!

Ingredients

2 x Chicken, Red Pepper & Feta Burgers
200g Spaghetti
200g Tomato & Mascarpone Pasta Sauce
Parmesan Cheese, however much you like
Olive Oil
Salt & Pepper
A few sprigs of Fresh Parsley

Method

  • Into a large hot frying pan, add in some olive oil
  • Quarter the burger meat and then roll up in a meatball
  • Add to the hot pan and fry for a few minutes, continuously moving them so they cook all over
  • Whilst the meatballs cook, start cooking the spaghetti pasta in salted boiling water. Cook until al dente or until softened to your liking
  • Once the pasta is cooked, add in the pasta sauce and stir before adding on the meatballs.
  • Grate some shavings of parmesan over, season and finish with fresh parsley
