Crispy Italian Tacos

Cook time 20 mins - Prep time 10 mins - Serves 5 
Chargrilled tacos, filled with crispy Posh Nuggets, caramelised red onions, fresh lettuce, tomato and finished with a creamy parmesan dressing.

INGREDIENTS: 

1 x pack Chicken Italia Posh Nuggets

1 tbsp Olive Oil, plus a little for brushing

1 Red Onion, sliced

1 Cos Lettuce, shredded

3 Vine Tomatoes, sliced

5 Small Tortillas

Parmesan dressing

5 tbsp Mayonnaise

1/2 tsp Dijon Mustard

30g Parmesan, grated

2 tsp Olive Oil

3 tsp Water

METHOD:

  1. Preheat oven to 180°c. Place the nuggets onto a suitable oven tray and bake for 20 minutes, until golden crispy.
  2. Meanwhile, add a tbsp of olive oil to a saucepan over a medium heat, add the sliced red onion and sweat for 10-12 minutes until soft.
  3. Add all the parmesan dressing ingredients to a bowl and stir to combine, then set aside.
  4. During the last 5 minutes of cook time, warm the tortillas, either in the microwave or brush a little oil onto a griddle pan over a high heat and place the tortillas on one at a time until warm and slightly charred.
  5. Assemble the tacos, add a handful of lettuce, tomato and red onion to each tortilla. Slice the nuggets into smaller chunks and arrange on top. Finally, drizzle over the dressing.
