Courgette Noodles

Prep time: 10 minutes.  Cook time: 10 minutes   Serves: 2

 Look no further for an easy low carb meal you can whip up in no time using only 8 ingredients! Courgette noodles in a fresh avocado sauce served with juicy cherry tomatoes and Heck Vegan Breakfast Sausages

Ingredients:

  • 1 Pack Vegan Breakfast
  • 1 Courgette
  • 1 Avocado
  • 12 Cherry Tomatoes – halved
  • 30g Basil
  • 4 Tbsp Pine Nuts
  • 2 Tbsp Lemon Juice
  • 85ml Water

 Steps:

  1. Pan-fry the Vegan Breakfast sausages on medium heat for 10 minutes
  2. Meanwhile, use a spiralizer to make the courgetti noodles. The noodles can also be made using a peeler
  3. De-skin and dice the avocado and add to a blender along with the basil, pine nuts, lemon juice and water. Blend until smooth
  4. Combine the noodles and avocado sauce and plate up with the halved cherry tomatoes and 2 Vegan Breakfast sausages
