Look no further for an easy low carb meal you can whip up in no time using only 8 ingredients! Courgette noodles in a fresh avocado sauce served with juicy cherry tomatoes and Heck Vegan Breakfast Sausages
Ingredients:
- 1 Pack Heck! Vegan Breakfast
- 1 Courgette
- 1 Avocado
- 12 Cherry Tomatoes – halved
- 30g Basil
- 4 Tbsp Pine Nuts
- 2 Tbsp Lemon Juice
- 85ml Water
Steps:
- Pan-fry the Vegan Breakfast sausages on medium heat for 10 minutes
- Meanwhile, use a spiralizer to make the courgetti noodles. The noodles can also be made using a peeler
- De-skin and dice the avocado and add to a blender along with the basil, pine nuts, lemon juice and water. Blend until smooth
- Combine the noodles and avocado sauce and plate up with the halved cherry tomatoes and 2 Vegan Breakfast sausages
