Burnt Honey BBQ Chicken Sloppy Joe

1) Start by making the burnt honey BBQ sauce. Heat a heavy-bottomed pan over medium-high heat and pour in the honey. Let it boil for 5–8 minutes, keeping a close eye on it as it darkens to a deep amber colour. Once it reaches a dark caramel stage, carefully stir in the BBQ sauce, adding it gradually and mixing well to create a smooth, smoky-sweet glaze. Set aside.

2) In a separate frying pan, cook the chicken mince over medium-high heat until fully browned and any liquid has evaporated. Pour in the burnt honey BBQ sauce and stir well to coat. Let the mixture simmer for another 5 minutes so the flavours can come together.

3) Meanwhile, toast the brioche buns until golden and lightly crisp.

4) For the greens, add the spinach to a hot pan with a splash of water. Cover for a minute or two until just wilted, then drain and set aside.

5) To assemble, layer the bottom half of each toasted bun with the wilted spinach, followed by a generous spoonful of the hot BBQ chicken mixture. Top with a tangle of pickled red cabbage for crunch and acidity, then finish with the top bun.

6) Serve hot—with napkins. It’s messy in the best way.
